Ingredients

  • 1 Quart (32 oz) pure tomato sauce

  • 1/2 cup tomato paste

  • 1/2 cup red wine

  • 1/2 cup finely minced onion

  • 1 large garlic clove, finely minced

  • 4 tablespoons fresh Italian parsley, coarsely chopped

  • 1 teaspoon salt

  • 1 teaspoon dry oregano

  • 1 teaspoon dark brown sugar

  • 1/4 teaspoon black pepper

  • 6 tablespoons olive oil

Directions

  • Using blender or food processor, blend together tomato paste, parsley, black pepper, oregano, salt, brown sugar, and 2 tablespoons olive oil into a puree.
  • Heat 4 tablespoons olive oil in large skillet on medium heat. Sauté onions and garlic until onions start to turn brown.
  • Deglaze skillet with half of the wine, scraping with wooden spoon. When reduced slightly, add the rest of red wine and reduce by about half. Make sure not to allow the onions to burn.
  • When wine is reduced, add pure tomato sauce and tomato paste/seasoning mixture to skillet. Whisk everything together very thoroughly, and allow to simmer on low heat for 15-20 minutes (or longer, if you want your sauce thicker).
  • Serve immediately over pasta. Garnish with parmesan cheese and fresh parsley (optional).
