For 1 LB of Ground Pork (or Venison)

  • 1 teaspoon Kosher salt
  • 3/4 teaspoon ground black pepper
  • 1/8 teaspoon coriander
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon red cayenne pepper
  • 1 1/2 tablespoon real maple syrup (added separately to ground meat)

For 5 LBs of Ground Meat

  • 5 teaspoon Kosher salt
  • 3 3/4 teaspoon ground black pepper
  • 1/2 heaping teaspoon coriander
  • 1/2 heaping teaspoon nutmeg
  • 1 1/4 teaspoon red cayenne pepper
  • 7 1/2 tablespoon real maple syrup (added separately to ground meat)

For 7.5 LBs of Ground Meat

  • 7 1/2 teaspoon Kosher salt
  • 5 1/2 teaspoon ground black pepper
  • 1 teaspoon coriander
  • 1 teaspoon nutmeg
  • 2 teaspoon red cayenne pepper
  • 11 1/4 tablespoon real maple syrup (added separately to ground meat)

For 10 LBs of Ground Meat

  • 10 teaspoon Kosher salt
  • 7 1/2 teaspoon ground black pepper
  • 1 1/4 teaspoon coriander
  • 1 1/4 teaspoon nutmeg
  • 2 1/2 teaspoon red cayenne pepper
  • 15 tablespoon real maple syrup (added separately to ground meat)

For a delicious and simple maple breakfast sausage, try this recipe. It’s big on flavor, with a very nice hint of maple syrup.

This is the sausage and seasoning mix recipe for 5 LBs of ground meat (pork and/or venison).

Ingredients

  • 5 LBs ground pork butt (or mix 50% pork / 50% venison)

  • 5 teaspoons kosher salt

  • 3 3/4 teaspoons ground black pepper

  • 1/2 heaping teaspoons ground nutmeg

  • 1/2 heaping teaspoons ground coriander

  • 1 1/4 teaspoons red cayenne pepper

  • 7 1/2 teaspoons real maple syrup

  • 1/4 cup cold water

Directions

  • Mix all dry seasonings together
  • Sprinkle over ground meat and mix into meat by hand
  • Add maple syrup and water, and mix a little more
  • You’re sausage is ready to be used as ground sausage, or stuffed into links.
