Italian Sausage Seasoning Recipe

This is the seasoning recipe for my classic Italian sausages. Like every sausage, there are a million different seasoning blends, but this one is my favorite. It tastes exactly like you want a delicious Italian sausage to taste.

Ingredients

  • 10 LBS of ground pork (or 50/50 pork and venison mix)

  • 2 tablespoons Kosher salt

  • 3 tablespoons whole fennel seeds

  • 4 teaspoons ground black pepper

  • 3 tablespoons paprika

  • 2 tablespoons dried basil

  • 4 teaspoons red pepper flakes

  • 2 teaspoons garlic powder

  • 1 teaspoon onions powder

  • 2 teaspoons regular sugar

  • 2 cups cold water

Directions

  • Mix all dry seasonings together.
  • Sprinkle evenly across ground meat. Using your hands, mix meat and seasonings together until evenly incorporated (but try not to over-work the meat more than necessary).
  • Pour in the cold water, and mix with your hands until evenly incorporated.
  • Sausage is now ready to be cooked as ground sausage, or stuffed into casings to make sausage links.
